Coffee farmers at the Doka Estate Coffee Tour in Costa Rica have a demanding job. From harvesting the coffee beans to preparing them for sale, they are responsible for every step in the process. Early Morning 

The day begins early at the Doka Estate. Before the sun has even risen, the coffee farmers are out in the fields, harvesting the ripe coffee cherries. They select only the best quality cherries, carefully inspecting them for signs of disease and rot. Once the cherries have been collected, they are brought to the processing facility, where they will be sorted and prepared for sale. Mid-Morning 

Once the cherries have been sorted, they are pulped and washed in large tanks. This removes the outer layers of skin, leaving only the beans. The beans are then dried in the sun, a process that takes about two weeks. During this time, the farmers continually monitor the beans, raking them to ensure even drying and to prevent them from clumping together.  

Afternoon 

Once the beans have been dried, they are sent to the roasting facility. Here, the beans are roasted to the perfect temperature and flavor. The framers carefully monitor the roasting process, making sure that the beans don't burn or become too dark. The beans are then cooled and packaged for sale.
