Recipe: Creamy Haloumi & Thyme Vegetable Soup

1. Start by heating up your soup pot on the stovetop. Add the onion, celery, carrots, garlic, and salt to the pot and sauté until the vegetables are tender.

2. Then add the water and haloumi cheese to the pot and let everything come to a boil. Once boiling, reduce the heat to low and let simmer for about 30 minutes.

3. Serve hot with some fresh thyme leaves on top if desired. 

Haloumi tastes slightly salty and has a hard texture that makes it perfect for cheese platters and pastries.
